Miller's Tips
Low Carb Sugar Free Creme Brulee
Makes approximately 12 servings.
1 ¼ quarts of heavy cream
½ vanilla bean split or 1 1/2 tsp. vanilla extract
1 cup Steviva Blend or equivlent
12 egg yolks
1. Combine heavy cream, vanilla and 1/2 the Steviva Blend or equivlent to a boil.
2. Combine the beaten egg yolks and remaining Steviva Blend or equivlent
3. Temper egg-Steviva mixture into hot heavy cream; cook until thick enough to coat the back of the spoon.
4. Fill small baking dishes 7/8 full, place in water bath
5. Bake in a 325 F (165 C) oven until just barely set, approximately 45 min.
6. Remove from water bath when cool, wipe bottoms of small baking dishes, and refrigerate overnight.
Two hours before the serving, sprinkle the chilled cream with Steviva Blend in an
even layer and place it under a broiler preheated to the maximum temperature. The Steviva Blend will caramelize to a sheet of very light brown
smoothness. You may need to turn the dish in the grill to achieve an even effect. It is important that this step be done very quickly in order to
keep the custard cold and firm and the top crisp and brown.
